German Potato Salad

A good potato salad does not have to include mayonnaise. Make a delicious potato salad with only potatoes (leave the skin on), some fresh herbs and a good vinaigrette mixed in.

 

1 kg potatoes (peeled only if necessary), cut into 1/2 cm slices
Salt
200 g bacon, cut into small cubes
1 onion, chopped
2 tablespoons cider vinegar
2 teaspoons Dijon mustard
2 teaspoons sugar
Freshly ground black pepper
3 dl sour cream or crème fraîche
2 tablespoons chopped parsley

 

  1. Put the potatoes in a pot of salted water.

  2. Bring to a boil, reduce heat and simmer until the potatoes are tender but still firm.

  3. Strain the water and transfer the potatoes to a large bowl.

  4. Fry the bacon in a skillet for about 10 minutes.

  5. Add onion and sauté until the onion is soft and translucent.

  6. Drain off the fat and add the bacon mixture to the potatoes. Mix well.

  7. Put vinegar, mustard, sugar and a little salt and pepper together in a bowl. Mix well.

  8. Stir in sour cream and pour the dressing over the potatoes.

  9. Mix together and season with salt and pepper.

 

Sprinkle parsley over the potato salad just before serving.

Dry rubs, wet rubs, marinades, sauces and more

You can say what you want about marinades and glazes, but the best (and easiest to use) flavoring for grilled dishes are rubs. It might be just salt and pepper or one of an infinite number of different seasoning blends. The use of rubs gives you unlimited opportunities to create great food.

 

I personally do not think that meat is boring, but there are some who disagree. A grilled steak with just salt and pepper goes a long way, and with a dollop of butter on top is stellar. But sometimes life needs some excitement, a bit of variety, and using flavorful rubs will erase any thoughts you might have had about meat being bland. Instead of sending your steak to dance lessons or decorating it with a fancy new tie, it is far easier to use your own exotic rub to impress friends and family.
