Tropical Fruit Salsa

2 dl minced melon

1 mango, peeled and minced

1 papaya, peeled and minced

1/4 red bell pepper, minced

1/4 green bell pepper, minced

1 shallot, peeled and minced

2 ts balsamic vinegar

2 Tbs freshly-squeezed orange juice

1 Tbs freshly-squeezed lime juice

2 ts fresh ginger, peeled and minced

1/2 ts salt

1/2 ts light brown sugar

Mix all ingredients together in a bowl and let “set” in refrigerator for 1 hour.
