Longing for Leo’s Barbecue sauce
2 Tbs vegetable oil
1 small onion, chopped
2 cans tomatoes with the juice (I used S & W tomatoes last time and they were ok, but I prefer the better Italian tomatoes)
1/2 cider vinegar
1 cup applesauce (see note)
1 Tbs Dijon mustard
1/2 Tbs Worcestershire sauce
2 Tbs dark brown sugar
1/2 Tbs sweet Hungarian paprika
1/2 Tbs chipotle chile powder (or more to taste)
1 Tbs salt
2 ts black pepper
Soften the chopped onion in the oil. Add all the other ingredients and simmer over very low heat until the sauce is thickened (I generally cook the sauce for 1 - 1 1/2 hours). Run the finished sauce through the food processor to make smooth. Use a little water if the sauce is too thick.
