Naan Bread

2 Tbs ghee or unsalted butter

1,5 dl buttermilk

1,5 dl sweet milk

25 g fresh yeast

2 eggs

1 ts sea salt

1 Tbs brown sugar

9 dl flour

melted butter

 

  1. Melt butter in a pan. Add buttermilk and sweet milk and take the pan off the heat to cool down a bit.

  2. Put the yeast in a large bowl. Add a bit of the milk mixture (at slightly above body temp) to the yeast and stir til the yeast is dissolved.

  3. Add eggs, salt, sugar and the rest of the milk mixture.

  4. Blend in half of the flour and stir til smooth.

  5. Add the rest of the flour, about 1/2 dl at a time..

  6. Put the dough on the counter. Knead for at least 5 minutes. Add more flour if necessary. 

  7. Wrap the dough in plastic wrap and put in the fridge overnight.

 

Heat the oven to at least 250° C

  1. Take the dough out of the fridge and put it on the counter. Press all the air out of the dough. Divide dough in four pieces.

  2. Roll out each piece of dough until aout 3-4 mm thick. The dough should be pear-formed. 

  3. Place the dough pieces on a pan and bake in the oven until they have some brown spots on them. 

  4. Take the breads out of the oven. Brush with melted butter and wrap in a kitchen towel until serving.

 

Tips

You can let the dough rise for a couple of hours at room temp instead of overnight in the fridge if you need to.
