Robbie’s Fish Marinade

Number of Servings: enough for 6-8 pieces of fish

An excellent recipe from Robbie Robertson (no, not the guitar player).

1/2 liter extra virgin olive oil
Freshly squeezed lime juice (from 3-4 limes)
4-5 garlic cloves, peeled and chopped
1/2 dl oyster sauce
A few fresh sprigs of cilantro

 

Mop

This mixture is for those who baste. It is sometimes referred to as a "mop", a term that men might want to use when their buddies start "talking barbecue". Calling this mixture a "mop" is way cooler than calling it "this excellent recipe I just found for basting the meat".

 

The mop can be used for most types of meats and is especially good with pieces that need to be grilled slowly over a long period of time.

 

1 bottle of your favorite beer
1 dl cider vinegar
1 dl vegetable oil
1/2 onion, chopped (don´t waste your time peeling)
3 garlic cloves, finely chopped
3 tablespoons Worcestershire sauce
1 tablespoon Rub-a-dub (see recipe page?)

 

  1. Mix all ingredients together in a small pot.

  2. Bring to a boil, reduce heat and simmer for 5 minutes.

 

Tip: If I am "mopping" I usually have a bowl of mop in one corner of the grill (indirect heat of course) to keep it warm.
